Roaster thoughts :
Anaerobic Naturals are quite complex coffees in nature and thus requires intricate roasting with utmost focus. The first crack is usually delayed and roast time is longer than usual. To deliver optimum flavor profile we ended up roasting this coffee for 9.30 Minutes with a high heat of 209 to finish off as a medium roast that preserves the delicate and fruity flavors.
About the Estate :
Hillgrove estate is a unique micro-climatic zone tucked away to the upper reaches of a beautiful west facing slope. These slopes are intercropped with a good mix of jackfruit
and orange trees, amongst which the coffee is selectively harvested, carefully processed over 48 hours which includes a small spell of anaerobic fermentation, after which its shade dried to maximize flavor.
