Roaster thoughts :
Naturals are known for their fruit forward and sweet flavor profile, but to preserve the same through roasting is always challenging. Naturals are are quite complex coffees in nature and thus requires intricate roasting with utmost focus. A light to medium roast brings out the best in a natural processed coffee. Too less or too much can render the coffee flavorless or bitter. Our roasters post sample roasting this coffee 6 ways and cupping them several times, determined a light-med roast with a high heat of 204 ideal for this coffee.
About the Estate :
Selectively harvested fully ripe coffee cherries have been controlled fermented for upto 48 hours and shade dried over an extended period to produce a fantastic versatile coffee. Fields in this zone are filled with jungle trees from the native "Shola Forests" of the Shevaroy Hills.
