Roaster thoughts :
Naturals have always been one of the best coffees to brew for their sweet flavor profile. On the contrary to create a profile that will extract the sweetness and right balance of flavours is an intricate process. The roast profiles were created between light to medium roasts with variable drum speeds, but cupping of coffees is where it got a lot more complex. We cupped coffees as usual after 72 hours but with unsatisfactory results and hence went on to cup them consecutively until the 10th day when we were blow away by the sweetness, mouthfeel and the dry aroma of the coffee. A slow roasted medium roast is what ended up becoming the final profile for this LOT from Ratnagiri Estate.
