Cupping notes :
The dry aroma is of fresh ripe fruits. The wet aroma when the fresh grounds first come in contact with water are pineapple an wine like. The cupping notes are like pineapple sorbet, a little red wine like with medium to heavy body and sweet-syrupy texture.
Coffee Processing :
Anaerobic fermentation produces lactic acids that give the final product a rich flavor. During the process, coffee is placed in sealed tanks that are pressurized from CO2 buildup, remaining pressure and oxygen are let out using release valves. The additional pressure forces the juices and sugars into the bean. The fermentation takes place with the whole cherry and eventually it is dried and washed.
Roaster thoughts :
At grey soul coffee, I cup hundreds of coffee every odd month. Some are truly distinctive and some are unique in their own ways. But coffees like this one are rare. When I first cupped it, the loaded sweetness from this coffee quoted my mouth entirely. The winey and pineapple like notes complimenting the juicy texture made this coffee a Grey Soul Coffee. Its a roaster recommended blend.

Gungegiri estate produces some of the best and award winning natural coffees with a burst of fruit flavors. This particular coffee is the highest scoring block of Gungegiri.
