Roaster thoughts :
A coffee that pairs well with Milk and straight Black. A special natural process coffee like this again requires certain tweaks to roast profile creation. When sample roasted 4 ways it produced incredible flavors as a medium roast when cupped. But when we tried to brew the same using a roast slight above medium, it resulted in a great espresso as well. Post cupping 6 different roast levels we determined a close to medium roast as the ideal roast profile for this coffee with a high heat of 207.
About the Estate :
A secretive waterfall with its own grotto, surrounded by the lushest
spice and fruit orchards beaming wich nutmeg, jackfruit,
macadamia, mangosteen, durian and fig trees is a perfect
description for Hidden Falls Estate. We selectively harvested this coffee and put it through a signature process involving a mix of aerobic dry fermentation and anaerobic fermentation that produces a very fruity cup.
