Roaster thoughts :
This particular LOT checks both boxes and thus yields a very well balanced cup. Being a natural, we wanted to preserve the sweetness & mouthfeel of this LOT. This was our primary approach for creating a roast profile for this LOT. We roasted this coffee 12 ways primarily and finalized 2 different profiles post cupping coffees after 72 hours, 96 hours & a week. We choose light one as filter and a medium one as espresso. The drop for light was 201-202 and for the espresso 208-209.
KNOW THE REGION :
Mon is an ethnic paradise and home to the Konyak tribe who is well known for the headhunting tradition practiced back in the days. They are still recognized by their tattoos on the faces and the exquisite jewellery as signs of their achievements and instincts during the headhunting days. A few farmers have planted between 10 and 200 trees each. The coffee that grows here in the shades of the natural forest is naturally processed and has a fruity honeycomb flavour.
