Roaster thoughts :
Higher the altitude better the coffee, is what we have always heard. And of course it is also about the coffee processing. This particular LOT checks both boxes and thus yields a very well balanced cup. The charge temperature on these delicate lots was lower than usual. This was our primary approach for creating a roast profile for this LOT. We roasted this coffee 9 ways primarily focused on lighter profiles. Super light profile all the way to light-medium is what we roasted to cup. Post cupping coffees after 72 hours, 96 hours & a week we chose the light-med profile with a 206 Drop as the eventual outcome for this LOT.

Zunheboto is situated in the heart of Nagaland at the height of 1313 meters above sea level and known for its natural beauty and the home of the Sumi tribe. They have a hard working culture that acumulates with the harvest festival called “Tuluni” where they celebrate the fruit of their hard work with their rich culturral heritage, tradition with songs, colourful dance and the exchange of gifts.
