Roaster thoughts :
A few months later, we are working again with this estate & its experimental producers to once again, introduce the very 1st, "Submarine Fermentation". This innovative process unveils wild tropical fruits & sweeter acidity in this experimental LOT. Unlike other coffees we roasted this LOT 6 ways right from 201 - 2012 Degrees. We cupped all variations and still could not find the right flavor profile. We roasted the LOT again, but this time had a longer roast time and only 2 variations of 209-10 and 212-13. We cupped, but also prepared some COLD BREW this time. In the end 209 came out to to be the right profile which works both as filter and cold brew. Filter for its heavier body and cold brew for an incredible fruity cup.

The 1st ever Burundi Washed Specialty Coffee was roasted by Grey Soul Coffee Roasters from Harley Estate. This marked the beginning of our journey & association with their producers. After the cherries have undergone the process of pulping (at the infamous, "Pulper House"), the fermentation is done underwater in a specialized container for an extended period.
