Roaster thoughts :
New region. New varietal. New Profile.
Assam is yet another region we are exploring this year. The profile we chose for this coffee is med-dark dropped at 216 degree. The coffee is ideal as espresso which produces a good consistent crema & rich espresso. This is our second med-dark profile after the single origin fermented espresso which we created. The coffee was roasted slow, with low-fed heat, longer Maillard phase, higher DTR and higher roast degree.
