Grey Soul Coffee Roasters Opens Its Third Flagship in Kala Ghoda, Mumbai
From a Roastery in Pune to 3 flagship cafés across Pune and Mumbai.
Grey Soul Coffee Roasters has opened the doors to its third flagship café in Kala Ghoda, South Mumbai, marking the next chapter in a journey that began with a roastery in Pune. What started as a roastery built around Indian specialty coffee has today grown into three cafés across Koregaon Park, Bandra and Kala Ghoda, supported by a headquarters in Pune where the roasting, profiling, experimentation and much of the behind-the-scenes magic happens.
For Grey Soul, however, opening a 3rd café was never simply about adding another address. It was about taking the brand's philosophy a step further and finding a neighbourhood where coffee, food, design and culture could naturally come together.

Why Kala Ghoda?
Kala Ghoda felt like a natural fit.
Known for its galleries, architecture, restaurants, independent businesses and cultural energy, the neighbourhood has always attracted people who are curious about what is new, interesting and different.
That spirit is closely aligned with Grey Soul's own approach to coffee. The new 50-seater café brings together Grey Soul's specialty coffee - slow bar pourovers, espresso bar, an all-day food menu and an expanded approach to the café experience.
But perhaps the most distinctive part of the new space is something that customers have already seen many times before, just not quite like this.
When a Coffee Bag Becomes a Café
Grey Soul has taken one of its most recognisable visual elements and turned it into architecture. The shape of the Grey Soul coffee bag, a distinctive triangle, has been carried into the physical design of the Kala Ghoda café.
The entrance, coffee bar, seating areas and merchandise corner all draw from the triangular form, creating a visual language that connects the product customers know with the space they are now walking into.
It is essentially Grey Soul's packaging brought to life.
The idea was to take something that has traditionally lived on a shelf or in a customer's home and translate it into an entire spatial experience. For customers who have followed Grey Soul for its packaging and visual identity, the connection is immediate. For those interested in architecture and design, it offers another way of looking at how a brand identity can move beyond graphics and become part of a physical space. This is a deliberate extension of Grey Soul's design philosophy: taking the familiar and looking at it differently.

More Than Just Coffee
While coffee remains at the heart of Grey Soul, the Kala Ghoda café also reflects the brand's belief that the café experience should extend well beyond the cup. Grey Soul has always operated with a hot kitchen and a menu built around fresh preparation, with food and bakes made in-house.
In Kala Ghoda, the kitchen has been brought into the experience through a live-kitchen format. Guests can see ingredients being prepared, food being cooked and dishes coming together before they reach the table. The emphasis is on made-to-order food, fresh ingredients and preparation that happens in real time.
It is another expression of the same philosophy Grey Soul applies to coffee.

A Coffee Story That Goes Beyond the Familiar
A significant part of Grey Soul's identity has also been its work with lesser-known Indian coffee origins, particularly across the Northeast. Over the years, the team has explored coffees from Nagaland, Mizoram, Assam, Tripura and other emerging regions, spending time closer to origin and understanding the producers, varieties, processing methods and conditions behind each coffee.
The objective is not simply to source something different, but to understand the coffee well enough to profile and roast it in a way that allows its individual character to come through. That curiosity has become an important part of Grey Soul's approach to Indian specialty coffee: looking beyond the familiar and bringing more of India's coffee-growing landscape into the conversation.
The Grey Soul Approach
At its core, Grey Soul is built around a simple idea: coffee does not have to be treated as one standardised product. Origin matters. Processing matters. Roasting matters. Brewing matters. A floral coffee from one region can taste completely different from a naturally processed coffee from another. A different roast profile or brewing method can reveal an entirely different side of the same bean.
This is why the brand's cafés are designed not only as places to drink coffee, but as spaces where people can spend time discovering it.
At the Kala Ghoda café, that includes slowbar pourovers, espresso-based coffees and a selection of Indian specialty coffees alongside food and bakes designed for longer visits.
