Roaster thoughts :
Some coffees reward intervention. Others ask for restraint.
This lot from Gungegiri arrived with exceptional fruit clarity and a naturally layered sweetness, requiring very little manipulation during roasting. Our objective was to build enough development to support structure while preserving the delicate aromatics that make the coffee distinctive.
The resulting cup remains vibrant and articulate, opening with bright citrus before revealing tropical fruit, raspberry-like acidity and a delicate cacao finish. As the coffee cools, its sweetness becomes increasingly pronounced, producing a profile that feels both expressive and remarkably composed.
Brewing Note: Due to its delicate roast level, we recommend brewing this coffee with higher water temperatures (93-97°C) and a controlled pour to ensure full extraction. Attention to grind size, agitation, and brew time is critical to achieve optimal clarity and balance in the cup.

Water is just as important as the beans. For the cleanest, most balanced cup, we recommend using **mineral water with a Total Dissolved Solids (TDS) level not above 140 ppm**. This will allow the true flavor of your coffee to shine.

Freshly roasted coffee continues to evolve. Harsh or roasty notes fade, giving way to sweetness, clarity, and complexity.
