From Pune to Bandra to Kala Ghoda, Grey Soul Coffee Roasters continues its journey of building a deeper coffee culture around Indian specialty coffee.

And then there are places where opening a café becomes part of the neighbourhood's story.

Kala Ghoda is one of those places.

Known for its galleries, architecture, restaurants, independent businesses and cultural energy, Kala Ghoda has always been a neighbourhood built around curiosity. It felt like the right place for Grey Soul Coffee Roasters to open its third flagship café.

After Koregaon Park in Pune and Pali Village in Bandra, Grey Soul has now opened its newest 40-seater flagship café in Kala Ghoda, Mumbai, bringing our coffee, food and approach to Indian specialty coffee to South Mumbai.

Three Flagships. One Growing Coffee Story.

Grey Soul began with a simple idea: Indian specialty coffee deserved to be understood more deeply.

Our Koregaon Park café in Pune became a space where coffee could be sourced, roasted, profiled, brewed and discussed. We then took that philosophy to Mumbai with our Bandra café.

Now, Kala Ghoda becomes the third chapter.

But opening another café was never the entire point.

The bigger objective is to keep building a culture around Indian specialty coffee.

The new Grey Soul Kala Ghoda café brings together specialty coffee, pour-over brewing, espresso and our all-day food menu in a 40-seater space designed to become part of the neighbourhood.

A place for your morning coffee.

A slow pour-over in the afternoon.

Breakfast.

Brunch.

Lunch.

A meeting.

A conversation.

Or simply a good reason to sit down.

At the centre of Grey Soul has always been our belief that coffee should be experienced, not simply served.

Pour-over coffee allows the character of a coffee to become part of the experience.

The origin.

The processing.

The roast.

The brewing recipe.

The extraction.

And ultimately, the cup.

At Grey Soul, coffee isn't treated as one standardised product.

The Northeast Is Changing the Indian Coffee Map

One of the biggest parts of Grey Soul's journey has been our exploration of Northeast Indian coffee.

For a long time, conversations around Indian coffee were dominated by a familiar group of regions.

But India has a much larger coffee story.

And some of the most interesting chapters are emerging from the Northeast.

Our journey into Northeast Indian coffee has taken us through Nagaland, Mon, Kohima, Mizoram, Assam and Tripura, exploring coffees, producers, processing methods and the landscapes behind them.

These aren't simply names printed on a coffee bag.

They represent different landscapes, communities, farms, varieties and ways of producing coffee.

And that difference matters.

The Unspoken India

There is a larger reason Grey Soul continues to explore Northeast India.

We believe there is an unspoken India in coffee.

An India that hasn't always been part of the mainstream specialty coffee conversation.

An India that deserves to be tasted, understood and talked about.

This is why we have spent time going closer to origin.

Not simply buying coffee and putting it into a bag.

But understanding where it comes from.

Understanding the people who grow it.

Understanding how it is processed.

Understanding how it is dried.

Understanding what happens to the coffee before it reaches the roastery.

And then asking an important question:

How should we roast it?

From Farm to Cup

"Farm to cup" can sometimes become just another phrase in the coffee industry.

For us, it represents a responsibility.

Every coffee has a story before it reaches the brew bar.

At Grey Soul, that journey involves:

Sourcing → Processing → Milling → Profiling → Roasting → Brewing

Our work goes beyond simply roasting green coffee.

We work closely with the coffees we source, including coffees from regions where specialty coffee is still developing. We have invested in understanding the coffee at different stages, including milling and preparation, before profiling and roasting it.

The objective is simple:

to bring out what is already there.

Not to hide the character of the coffee behind a roast.

Not to make every coffee taste the same.

But to understand each coffee and build a roast profile that allows its character to come through.

Why Kala Ghoda?

There was something particularly fitting about bringing Grey Soul to Kala Ghoda.

Coffee is increasingly becoming part of a larger cultural conversation.

People want to know where their coffee comes from.

They want to understand roasting.

They want to taste different origins.

They want to know why one coffee tastes floral while another tastes like berries, citrus, chocolate or stone fruit.

And they want spaces where they can spend time doing that.

Our kitchen is an important part of that experience.

Just as we approach coffee with curiosity and attention, we approach food with the same care.

Bandra helped us take Grey Soul into Mumbai.
